Christmas Cookies / Holiday Baking

Butter cookies are a favorite. Who can say no to them? With Christmas around the corner, it is festive lights and cheer everywhere. Last week was home caroling weekend at our church. Its been fun visiting houses, spreading cheer and  jollying, munching the goodies that’s served after the singing and repeating. Fun.Cheer.Repeat.Some of the places we drove to were very picturesque. When it was time for the singers to visit our place, we packed a marbled cake, cookie and a chicken puff. I was running short of time baking everything at one go, but then managed to. When I came across this site, I knew I wanted to bake them and this is the third time I have tried these cookies. These cookies are fail proof. True that it is a Butter Cookie.

Recipe:

Makes : 25-28 Cookies
225 gm Flour
165 gm butter
75 gms powdered sugar/castor sugar
3/4 cup Dried fruits/nuts chopped
Essence : Vanilla / Rosewater 3/4 tsp
Elaichi powder : 1/4 tsp

Cream the sugar and butter till soft and fluffy. To this add the flour.
After adding the flour, it will be crumbly but it will come together.
Divide the dough into 2.

To the first batch I added dried fuits like raisins, cranberries, almonds and walnuts                           

To the second batch I added pistachios, rosewater, elaichi powder
Form a log on a cling film and refrigerate for about 30 minutes

Preheat oven to 175 C and cut about 3/4 cm thick discs and place on the baking tray.
Bake for about 12 minutes and keep an eye when the colour starts changing around the edges.
The cookies will crisp up after cooling.
